Peel and slice the shallots and carrot. Peel, degerm and crush the garlic under the knife.

Heat the olive oil in a casserole dish over medium heat. Add the shallots, carrot, shrimp carcasses, celery salt and thyme, pepper and sauté for 5 – 7 minutes, until golden. Add the garlic and tomato paste and sauté for 2 minutes. Add the wine and reduce for 2 minutes. Add hot water, bring to a boil, then reduce heat to medium, cover and simmer for 15 minutes.

Blend the mixture in a blender in several batches (do not fill the blender more than half or the liquid may overflow!) at high speed for several minutes, until the solids are pureed. Pass through a strainer and return to the casserole dish. If necessary, blend the remains of the strainer then strain them again to obtain a thicker bisque.

To finish
Warm the bisque for a few minutes, adjust the seasoning, then serve hot with croutons, chopped chives and a drizzle of cream, if you wish.
