Today, I offer you almond and hazelnut cookies, flavored with cinnamon. A flour-free and gluten-free recipe, for everyone’s pleasure. They are very easy and quick to make, super soft and melt in the mouth. Taste-wise, these cookies are very little sweet, with an intense taste of hazelnuts and almonds. Cinnamon provides a sweet and captivating scent. A pure delight! A perfect recipe for the fast-approaching end-of-year holidays and for gourmet gifts.

    Prepare the dough

    In a large bowl, combine the eggs, egg yolk, icing sugar, salt, apricot jam and lemon zest. Separately, mix the hazelnut powder with the almond powder, cinnamon and baking powder. Incorporate into the first preparation, in 3 batches, first with a spatula, then by hand. Cover the bowl and refrigerate for 30 minutes.

    Preheat the oven

    Preheat the oven to 200°C, static heat.

    Shape the cookies

    Prepare a small bowl with water and another with the icing sugar. Take a tablespoon of dough and with slightly wet hands, make a ball the size of a walnut, then roll it generously in icing sugar. Place on a baking sheet with parchment paper or a silicone mat. Do the same with the remaining dough. I got 2 trays of 12 cookies. With your finger, make a small well in each ball, in the middle, and place an almond inside.
