Half as many calories as mashed potatoes, it’s the perfect accompaniment for poultry

As a change from traditional mashed potatoes, this alternative delights us without weighing us down. It goes really well with turkey and chestnuts!

Oysters, foie gras, turkey stuffed with chestnuts and a good log to drive the point home… New Year’s Eve feasts can be as boring as your mother-in-law. To avoid sinking before dessert, there are a few strategies to implement at the table. The first? Don’t indulge in foie gras as an aperitif: moderation is essential if you don’t want yours to end up in the same state before the end of the year. Then, there are little tips to lighten your stomach. To accompany turkey, for example, you can swap traditional mashed potatoes with a lighter variation. Indeed, this starchy food tends to be a little stuffy, especially when it is served pureed. That’s good, a chef has just given us a recipe for the occasion. It’s half the calories and goes wonderfully with turkey and chestnuts!

In this videochef Christophe Forget prepares a light puree ideal for the holidays. “It goes perfectly with poultry.“, he testifies. Here, the cook swaps the potato for an autumn vegetable with half the calories. With its sweet chestnut taste, it contrasts pleasantly with the turkey and is reminiscent of chestnut stuffing… Butternut (doubeurre in French). With only 45 calories per 100 g (compared to around 80 for the potato), its cooked flesh makes it possible to obtain a creamy puree which does not weigh on digestion.

For cooking, nothing could be simpler: start by browning the butternut cubes and a chopped onion in a pan with a drizzle of olive oil. The chef also recommends adding a small diced potato: “This helps bind the puree», he justifies. So, no need for butter or milk: add vegetable stock and let everything simmer, covered, for 15 to 20 minutes. Then, all that remains is to put everything through a potato masher or blender. A pinch of fleur de sel, a little grated nutmeg or allspice and you have the perfect Christmas puree!

With this butternut puree which lightens the plate without sacrificing taste, you keep the magic of the meal… and a little space for what comes next. Enough to finish dinner without collapsing in the chair or dreading the digestive. In short, a little tip that changes everything and allows you to enjoy the party until the last bite.
