Egyptian cuisine is known for its rich flavors and unique traditional dishes, and Koshk (Kishk) is one of those comforting recipes many people love and ask for often. It’s delicious, creamy, and nutritious, making it a great option for both kids and adults. Here’s how to prepare authentic Egyptian Koshk, following the recipe shared by Chef Amira Shanab from her show Amira in the Kitchen on CBC Sofra.
Ingredients
- Yogurt
- Flour
- Oil
- Milk
- Broth (chicken or vegetable)
- Cream
- Onion, finely diced
For serving:
- Crispy fried onions
- Oil for frying
How to Prepare Egyptian Koshk
- Start the base:
Mix the yogurt with a pinch of salt and flour. Stir well until smooth, then let the mixture rest to lightly ferment. - Sauté the onions:
In a pan, sauté the diced onions in ghee or oil until golden. - Cook the Koshk:
Add the yogurt–flour mixture to the pan, then pour in the broth, milk, and cream. Stir continuously over medium heat until the mixture thickens into a smooth, creamy consistency. - Serve:
Pour the Koshk into a serving dish and top it generously with crispy fried onions for extra flavor and texture.
Enjoy this warm, comforting Egyptian classic with your family!
